Seniors Alan Shapiro, Andrew Curl, and Mark Manfredi had just begun to offer a nighttime snack delivery service when they found out their model was actually illegal.

Late Nite Bite, the night time food delivery business started by the seniors, has taken off in the Mayfield community over the past three weeks. It seemed everything was going great until the group found out they were actually violating multiple FDA regulations -something high schoolers should generally try to avoid. “We changed our menu due to some legal restrictions, [and] we wanted to make sure our company was complying with all legal and health standards,” said proprietor Alan Shapiro.

The budding business has now shifted their model to selling a variety of delectable baked goods such as cookies, brownies, and cinnamon rolls with more items to come in the near future. “We are really excited about this new menu because it forces us to adapt and add menu items that otherwise we wouldn’t think of, like our delicious s’mores cookies,” said Shapiro. And it seems the results match the owner’s excitement, as since the change Late Nite Bite’s popularity train exploded to take off at an even faster speed.
